Suya-Spiced Salmon
Suya typically refers to the skewers of grilled meats sold by street vendors across West Africa. It also refers to the peanut-based spice blend used to season the meats. You can enjoy these same flavors at home by making your own suya spice blend and using it to season salmon (or any other type of fish) to your liking. Feel free to adjust the amount of hot pepper to your taste preferences. An Oldways recipe, created in partnership with The Peanut Institute.

Ingredients
Suya Spice
1/4 cup of peanut powder, or 1/4 cup of dry roasted peanuts, finely ground
1 tbsp of ground ginger
1 tbsp of onion powder
1 tsp of cayenne pepper
2 tsp of garlic powder
1 tbsp of paprika
1 tsp of salt
1 tsp of black pepper
1/4 tsp of cloves, ground
Salmon
1 (2-pound) of salmon fillet
2 tbsp of olive oil
3 tbsp of Suya Spice
1 tsp of salt
Instructions
- Combine all spice ingredients and store in a sealed container. (Recipe makes ½ cup.)
- Preheat the oven to 400°F.
- Place salmon, skin side down, on a foil- or parchment-lined baking tray. Brush the top with olive oil, then season with the suya spice blend and salt.
- Place the tray in the oven and bake for 10-20 minutes, depending on the thickness of your salmon.
- Remove salmon from the oven, garnish with lemon slices if desired, and serve.
