Suya-Spiced Salmon

Suya typically refers to the skewers of grilled meats sold by street vendors across West Africa. It also refers to the peanut-based spice blend used to season the meats. You can enjoy these same flavors at home by making your own suya spice blend and using it to season salmon (or any other type of fish) to your liking. Feel free to adjust the amount of hot pepper to your taste preferences. An Oldways recipe, created in partnership with The Peanut Institute.

Ingredients

Suya Spice

E1/4 cup of peanut powder, or 1/4 cup of dry roasted peanuts, finely ground
E1 tbsp of ground ginger
E1 tbsp of onion powder
E1 tsp of cayenne pepper
E2 tsp of garlic powder
E1 tbsp of paprika
E1 tsp of salt
E1 tsp of black pepper
E1/4 tsp of cloves, ground

Salmon

E1 (2-pound) of salmon fillet
E2 tbsp of olive oil
E3 tbsp of Suya Spice
E1 tsp of salt

Instructions

    Suya Spice

    1. Combine all spice ingredients and store in a sealed container. (Recipe makes ½ cup.)

    Salmon

    1. Preheat the oven to 400°F.
    2. Place salmon, skin side down, on a foil- or parchment-lined baking tray. Brush the top with olive oil, then season with the suya spice blend and salt.
    3. Place the tray in the oven and bake for 10-20 minutes, depending on the thickness of your salmon.
    4. Remove salmon from the oven, garnish with lemon slices if desired, and serve.

OPTIONAL GARNISH: Lemon slices
