Crunchy & Creamy Cold Green Pea and Peanut Salad

This crunchy and creamy pea and peanut salad is destined to be the belle of the ball at potlucks and cookouts this summer! It’s a totally easy side dish filled with sweet peas, crispy bacon, roasted peanuts, chopped celery, and diced red onion, all dressed in a sweet and tangy sour cream/mayo dressing.

Ingredients

For the dressing

E1/3 cup of sour cream
E1 1/2 tbsp of mayonnaise
E2 tsp of apple cider vinegar
E2 tsp of sugar
E1 pinch of salt and pepper

For the salad

E1 20 oz pkg of green peas, frozen
E1 cup of celery, chopped
E1/3 cup of red onions, chopped
E1 cup of dry roasted peanuts
E6 slices of thick cut bacon, cooked & crumbled

Instructions

    For the dressing

    1. In a small mixing bowl, whisk together the sour cream, mayonnaise, apple cider vinegar, and sugar.

    For the salad

    1. In a large mixing bowl, combine the frozen green peas, celery, and onion. Pour the dressing over the top, and toss to combine. Refrigerate for at least two hours.
    2. Before serving, stir in the crumbled bacon and roasted peanuts. Season with salt and freshly ground black pepper to taste.
