Crunchy Peanut Waldorf Salad

This healthier version of the beloved salad is every bit as delicious as the original—but thanks to the addition of peanuts, has the added bonus of nutty crunch, along with the invaluable plant nutrients the peanuts provide.

Ingredients

E1/3 cup of canola mayonnaise
E1/4 cup of light sour cream
E1 tbsp of lemon juice
E1/2 tsp of salt
E1/4 tsp of ground black pepper
E12 oz of chicken breast, cut into 3/4-inch pieces cooked (about 2 ½ cups)
E1 1/4 cups of red seedless grapes, halved
E1 each of medium golden delicious apple, cut into 3/4-inch pieces
E2 each of celery ribs, sliced
E2 oz of lightly salted dry roasted peanuts

Instructions

  1. Combine the mayonnaise, sour cream, lemon juice, salt and pepper in a bowl. Combine the chicken, grapes, apple, celery and peanuts in a separate bowl. Add the mayonnaise mixture to the chicken mixture and toss well to coat.
