Ingredients

E1 each of turkey, (20 lbs.)
E1 cup of sea salt
E5 shallots of shaved
E5 cloves of garlic, crushed

Instructions

  1. Heat the chicken broth to a boil with all the ingredients to infuse.
  2. Remove from the heat and cool.
  3. Place the liquid into a large container, bag or clean bucket that can accommodate the turkey.
  4. Brine overnight.

*This liquid can also be used to inject the turkey
