Peanut Butter Pudding

Ingredients

E1 1/2 cups of skim milk
E1/2 cup of half and half
E1/2 cup of sugar
E2 1/2 tbsp of cornstarch
E2 tbsp of unsweetened cocoa powder, sifted
E1/2 tsp of vanilla extract
E1/3 cup of creamy peanut butter
E2 tbsp of lightly salted peanuts, chopped

Instructions

  1. Whisk together the milk, half and half, sugar, cornstarch, cocoa powder and vanilla extract in a medium saucepan. Cook, stirring, until the mixture is thick and bubbly, 6-7 minutes. Remove from the heat and whisk in the peanut butter until smooth. Evenly divide the pudding among 6 small bowls.
  2. Sprinkle the top of the puddings with the chopped peanuts. Serve warm or cover with plastic wrap and refrigerate until ready to serve.
