Peanut Butter Banana Pancakes

Ingredients

Peanut Butter Banana Pancakes

E2 TB of creamy peanut butter
E1 medium ripe banana
E1 egg

Instructions

  1. Preheat griddle to 350 degrees and coat lightly with vegetable oil.
  2. Using a blender or mixer, combine peanut butter, banana and egg and mix until smooth.
  3. Once griddle is hot, ladle the batter on the griddle creating cakes that are 2” in diameter.
  4. Cook until bubbly then flip with a thin spatula.
  5. Cook an additional 1-2 minutes then remove from griddle.
  6. erve with chopped peanuts, peanut butter or your favorite pancake toppings if desired.

Serving size: 5-7 small pancakes
