Peanut Butter Banana Pancakes
2 TB of creamy peanut butter
1 medium ripe banana
1 egg
Instructions
- Preheat griddle to 350 degrees and coat lightly with vegetable oil.
- Using a blender or mixer, combine peanut butter, banana and egg and mix until smooth.
- Once griddle is hot, ladle the batter on the griddle creating cakes that are 2” in diameter.
- Cook until bubbly then flip with a thin spatula.
- Cook an additional 1-2 minutes then remove from griddle.
- erve with chopped peanuts, peanut butter or your favorite pancake toppings if desired.
Serving size: 5-7 small pancakes
