Ingredients

Roasted Cauliflower

E1 head of cauliflower, cored and cut into bite sized pieces
E2 stems of green onions, cut into 2-inch pieces
E3 tbsp of olive oil
E1/2 tsp of salt
E5-10 individual sprigs of fresh thyme
E5-10 individual sprigs of fresh rosemary

Cumin-Citrus Peanut Sauce

E3 tbsp of creamy unsweetened peanut butter
E1 tsp of water
E1 tbsp of lemon juice
E2 tbsp of orange juice
E1 tsp of maple syrup
E1 clove of garlic, grated
E1 tsp of cumin
E1/2 tsp of paprika
E1/4 tsp of salt
E2 tbsp of chives, chopped

Toppings

E2 tbsp of sliced green onions
E1/4 cup of crushed peanuts

Instructions

    Roasted Cauliflower

    1. Preheat oven to 425 degrees.
    2. Add the cauliflower to a sheet pan with the green onions, then drizzle the oil over the top. Add salt and pepper, then toss to combine. Add thyme and rosemary.
    3. Bake for 30-40 minutes, until soft and crisp. Toss once while the cauliflower cooks.

    Cumin-Citrus Peanut Sauce

    1. While the cauliflower roasts, make the peanut sauce. Add all ingredients for the sauce to a small bowl and whisk to combine.
    2. Remove from the oven and remove the thyme and rosemary stems.

    Toppings

    1. Top with sliced green onion, chopped peanuts and the peanut sauce.
