Crunchy Peanut Butter Mason Jar Salad

Ingredients
Dressing
1/2 cup of warm water
1/2 cup of peanut powder
2 tsp of low sodium soy sauce
1 TB of lime juice
1 TB of brown sugar
3 finely minced garlic cloves
Salad
1 & 1/4 cup of chopped roasted peanuts
1 cup of cooked grain of choice
1 cup of shelled edamame
1 cup of red bell pepper, small dice
1 cup of red shredded red cabbage
1 cup of matchstick carrots
2 cups of Romaine lettuce
Instructions
- For the dressing, whisk together water, peanut powder, soy sauce, lime juice, brown sugar and garlic.
- Set aside and assemble all ingredients for the mason jar salads.
- For each jar, begin with pouring ¼ cup dressing into each mason jar.
- Layer with ¼ cup cooked grain, ¼ cup edamame, ¼ cup red bell pepper, ¼ cup red cabbage, ¼ cup carrots and finish with lettuce.
- Sprinkle 1 TB chopped peanuts over lettuce and secure the lid.
- For best quality, consume within 2-3 days of assembly.
- Grains like buckwheat or quinoa are recommended. Follow package directions for cooking instructions.
