Ingredients
5 Bean Salad
1 cup of roasted peanuts
1 cup of canned black beans, drained and rinsed
1 cup of canned red kidney beans, drained and rinsed
1 cup of frozen or fresh green beans, warmed and drained
1 cup of shelled edamame
1/4 cup of red onions, small dice
1/4 cup of red bell pepper, small dice
1/4 cup of peanut oil
1/4 cup of white balsamic vinegar
1/2 tsp of black pepper
1 tsp of kosher salt
Instructions
- Combine peanuts, black beans, red kidney beans, green beans, edamame, red onion and red bell pepper. Set aside.
- In a separate dish, whisk together peanut oil, white balsamic vinegar, pepper and salt.
- Add dressing to the bean mixture and stir until combined.
- Place in the refrigerator to marinate for at least 6-8 hours before serving.
- When ready to serve, stir and season to taste with additional salt or seasonings if needed.
