5 Bean Salad

Ingredients

5 Bean Salad

E1 cup of roasted peanuts
E1 cup of canned black beans, drained and rinsed
E1 cup of canned red kidney beans, drained and rinsed
E1 cup of frozen or fresh green beans, warmed and drained
E1 cup of shelled edamame
E1/4 cup of red onions, small dice
E1/4 cup of red bell pepper, small dice
E1/4 cup of peanut oil
E1/4 cup of white balsamic vinegar
E1/2 tsp of black pepper
E1 tsp of kosher salt

Instructions

  1. Combine peanuts, black beans, red kidney beans, green beans, edamame, red onion and red bell pepper. Set aside.
  2. In a separate dish, whisk together peanut oil, white balsamic vinegar, pepper and salt.
  3. Add dressing to the bean mixture and stir until combined.
  4. Place in the refrigerator to marinate for at least 6-8 hours before serving.
  5. When ready to serve, stir and season to taste with additional salt or seasonings if needed.

Serving size: About ½ cup
