Haystack No Bake Cookies

These no-bake cookies are no joke — packing a whole lot of delicious in with the protein power of peanuts.

Ingredients

E11 oz. of white chocolate chips
E1 cup of salted dry roasted peanuts
E3/4 cup of dried cranberries
E1, 5 oz can of chow mein noodles

Instructions

  1. Melt the white chocolate chips in the microwave or in a double boiler on the stovetop until smooth.*
  2. Add the chow mein noodles, peanuts, and dried cranberries. Stir to mix well.
  3. Drop by rounded spoonfuls onto a baking sheet lined with parchment paper.
  4. Cool for at least one hour before removing the haystack cookies from the parchment paper.

How To Melt White Chocolate

Stovetop — heat the white chocolate chips in a double boiler over gently simmering water, stirring until smooth.
Microwave — heat white chocolate chips in a microwave-safe bowl at medium power (50%) for 1 to 1 1/2 minutes. Stir until the bowl no longer feels warm. Continue heating at 15-30 second intervals, stirring until smooth."
